Mini Blueberry Muffins


The other day, bought this blueberries from NTUC, 2 packs for S$4.20 (if not mistaken)..saja aje bought them cause I remembered seeing somewhere in one of the blogs using blueberries in their recipes..so I thought, buy aje just to standby...browse and browse, saw some recipes in Noreen blog that use blueberries..I was contemplating to use either the French Blueberry Muffins or this Mini Blueberry Muffins recipe...Checked the ingredients, ah! decided on this cause not much ingredients needed and also small amount of mixture..(just scared if do to much cant finish)...Mum and Dad said OK, Mr Hubby also said OK ...so this recipe can keep! Ingredients:-
160g plain flour
80g Castor sugar
11/4 tsp baking powder
1/8 tsp soda bicarbonate
1/4 salt
1/2 tsp cinnamon powder(I didn't put this)
125 ml fresh milk
65g unsalted butter-melted
1 egg
100g fresh blueberries or frozen

Method:-
Preheat oven at 190 degrees Celsius (my oven 175).
Arrange muffin cups in muffins pan and put aside.
Sift flour, baking powder , soda bicarbonate, salt and put aside.
Mix fresh milk, egg, sugar and melted butter and whisk till well. Add in the dry ingredients into the wet mixture and stir well using a wooden spoon. Add in 65g blueberries and stir well. Scoop mixture into muffin cases till finish. Sprinkle the balance blueberries on top of each muffin mixtures.Bake for 15-20 minutes or till cook.
